Meet our team.

  • Mark

    During his time as an apprentice Mark competed and won several competitions such as Apprentice of The Year and Nestle Golden Chef Hat. He was flown around Australia to demonstrate his culinary skills as a result.

    As a qualified chef, he engaged in all the kitchen roles before settling in as head chef then executive chef.

    These roles were in high turnover restaurants with large kitchen brigades; Australian fine dining, inner city bistros and commercial catering companies.

    At age 26, he opened the first of two restaurants in inner city Brisbane, with over 26 staff members and a 1.2 million dollars turnover in his first year.

    In the subsequent years of ownership, Mark placed first nationally in the restaurant industry.

    Having retired from the busy kitchen lifestyle, he is nonetheless still very passionate about the hospitality industry and believes his experience should benefit upcoming Brisbane restaurant and cafe owners.

  • Luce

    Luce is a French national who spent her childhood years in South East Asia. As a result, both cuisines have always been close to her heart and a constant source of inspiration.

    Her teenage years were spent in mainland China, where she was an apprentice at the family’s French fine dining resturant while finishing her school studies.

    Her later roles focused on French restaurant and bistro management in cities such as Hong-Kong and Paris.

    Once settled in Brisbane, she quickly climbed her way up to head chef in busy inner city resturants, combining both her knowledge of French and Asian cuisines in every menu creation.

    Luce is an enthusiastic food experimenter and has succesfully created Asian, plant-based, and seasonal versions of traditional French recipes in order to keep up with market demand whithout sacrificing culture or flavour.
